The main series is which is an adaptation of first part of the homonymous manga by Masami Kurumada. The second part of that manga was later adapted in three different series of OVAs which tells about the Holy War fought at the end of the 20th century between Athena and Hades: • Hades: Chapter Sanctuary • Hades: Chapter Inferno • Hades: Chapter Elysium This is the core of the story and is set in the 1990s. In the same period of time are set the four OAVs: Jashin Eris, Kamigami no Atsuki Tatakai, Shinku no Shounen Densetsu and Saishuu Seisen no Senshi-tachi. Then there are the prequels: • Episode G is set a brief time before the main story and tells stories about the youth of the Gold Saints. • Next dimension is both a prequel and a sequel (it involves time travel): it is written by the same author of the original story and it tells about the Holy War fought 243 years before the main story. • Lost Canvas is an alternative prequel (who was adapted by into a two series of OVAs) written by another author, which tells an alternative version of the Holy War fought 243 years before the main story. The sequels are: • Next dimension (see above) • Soul of Gold is set in parallel to the ending of the main story and tells about the Gold Saints who are resurrected after their sacrifice at the end of the main story.
• Tenkai-hen an OVA set after the ending of the main story and sees as the main antagonist the God Artemis. • Omega is set 25 years after the main story and tells about the 'new generation' of Saints who will have to fight agains Mars and his warriors. There is also a spin-off, called Saintia Sho set more or less in the middle of the main story, where the main antagonist is the Goddes Eris. The following is a scheme showing how the various series are related. I should add that canonicity in Saint Seiya is extremely wishy-washy.
If you're going purely by Kurumada's timeline, it would pretty much only be his Mangas, both the original and Next Dimension. Anime-wise, you have all that plus the Asgard arc (and by extension Soul of Gold) which was completely made for the anime, the movies, including Tenkai-hen and Omega.
Really, each fan's definition of what's canon or not can vary. I hear some fans consider Lost Canvas to be more canon than ND due to personal preference, since the two series greatly contradict each other. – Mar 15 '16 at 2:12.

It is a based on the manga series, which was created, written and illustrated by Japanese author. The Lost Canvas was published by in the magazine since August 24, 2006, concluding after 223 chapters on April 6, 2011, with twenty-five released. Originally envisioned as a comic book whose purpose was to work simultaneously with Kurumada's as a multi-angle interpretation of the shared elements of its storyline, which stems from an event mentioned in Kurumada's original Saint Seiya manga; the approach was quickly abandoned, as both works greatly diverged, Kurumada's Next Dimension stayed as the canonical telling of these events, and The Lost Canvas as a separate alternate retelling.

The story takes place in the 18th century, and focuses on how an orphan known as Tenma becomes one of 's 88 warriors known as Saints and finds himself in a war fighting against his best friend Alone who is revealed to be the reincarnation of Athena's biggest enemy, the God. In June 2009, started adapting the manga in format, producing 26 episodes, which followed the source material closely and occasionally expanded on it.
Teshirogi also started releasing a spin-off series from Lost Canvas two months after the main serialization ended. Titled Saint Seiya: The Lost Canvas – The Myth of Hades - Anecdotes ( 聖闘士星矢 ( セイントセイヤ ) The Lost Canvas 冥王神話 外伝, Seinto Seiya Za Rosuto Kyanbasu - Meiō Shinwa Gaiden), the spin-off focuses on short stories related to several Saints before the events described in the main series. On April 23, 2012, it was announced in the Shōnen Champion magazine that The Lost Canvas was to change from a weekly to a monthly publication the following June, and shifting to the newly created magazine, Akita's Bessatsu Shōnen Champion, supplementary to Shōnen Champion, resuming publishing of the remaining Anecdotes chapters in that date. In May 2013, TMS announced via its Twitter account that there were no plans for a third season for The Lost Canvas anime adaptation. Additionally, a special chapter of the manga was announced, to commemorate Kurumada's 40th anniversary as a manga artist.
